Avocado, Corn, & Tomato Salad

Looking for a quick and easy side dish to bring to a potluck this summer that tastes amazing?

This recipe is so easy you can do it while holding a baby and it will leave your mouth watering. 

What you need 

2 avocados diced

1 pint sliced cherry tomatoes

1 TBSP diced red onion

1 1/2 cups frozen corn prepared according to directions

1/4 cup cilantro chopped

1 lime juiced

2 tsp olive oil

salt & paper to taste

OPTIONAL ADD INS- black beans, poblano peppers, cucumbers, feta cheese, or anything that sounds amazing!



1. Combine all food items in large salad bowl.

2. Drizzle the top with olive oil, lime juice, salt, & pepper.

3. Toss the salad gently and serve on a cute summer tray!
