No Bake Lactation Cookies Recipe! - Milk & Baby

No Bake LACTATION Cookies

Makes 22 Servings

Ingredients:

2 cups sugar

1 cup unsweetened cocoa

16 tablespoons of butter

1 cup milk

5 cups rolled oats

1 cup peanut butter

6 tablespoons of brewer's yeast (must be brewer's)

1 cup of flaxseed meal or ground flax seeds

2 teaspoons of vanilla extract

 Directions:  

Set up cookie sheets with waxed paper FIRST.

Mix oats, brewer's yeast, flax and nuts in a large bowl.

Bring first 4 ingredients to a roaring boil. 

Set timer for 1 min (must boil for a complete min in order to setup properly). 

Take off heat. 

Stir in PB & vanilla extract. 

Dump into oat mixture. Mix thoroughly & quickly. Spoon onto wax papered cookie sheets. Allow to cool.

As with regular no bake cookies, if they are still gooey after letting cool completely just scoop the gooey cookies back into a pan and reheat to let some liquid evaporate, just make sure to stir constantly. Approximately another minute or 2 of sizzling should do the trick.

They last about a week. You can use brown sugar instead of regular sugar. They are good and help some. Plus all the extra fiber helps lower cholesterol

This has happened to me before when making no bake cookies. I think it has to do with how long you let the mixture boil. I hope next time they turn out better! I think you can still eat the gooey mixture with a spoon and they will still be yummy!

Made these last night while staying with my daughter after the birth if her 2nd child. Assembled everything beforehand. Followed recipe precisely and the cookies are gooey, not set. Any suggestions for fixing them?
